Baja style fried fish tacos in your own home!
Baja Style Fish Tacos
SERVES 4
Ingredients
1- 1.5 pound cod or haddock
1 C flour
1/2 tsp baking powder
1/2 tsp garlic powder
dash of chili powder- optional of course
1 1/2 tsp
1 C light beer
oil for frying- 1 Qt
favorite corn or flour tortillas
Slaw
thinly sliced cabbage
salt & sugar
Green and/or Yellow Llamacita Sauce
Accoutrements
lime wedges
pickled veg
Llamacita Green Sauce
Instructions
Preheat your oven to 225. Have a wire rack on a baking sheet waiting in the oven, ready to receive your crisp delicious pieces of fish. Also- wrap your tortillas in foil and place in oven to warm through.
Cut your fish into taco- esque pieces, about 4 inches an inch or so wide. I like to do some slight angles- making it look perfectly imperfect, not fish sticks. Sprinkle with a little salt and place on a plate in fridge.
Whisk together flour and other dry ingredients, add beer and let rest in fridge while oil heats up.
Heat oil to 350-375, dip your fish pieces into batter and gently place in oil, even though they are small pieces, it’s good habit to lay them down in hot oil away from you. Tongs or a fork can be good here. Do not overcrowd your pan and fry until golden brown for about 3 minutes.
Place on wire rack and keep warm until ready to serve.
Do slaw ahead of time- toss cabbage with a sprinkle of salt, sugar, and a glug or two of Yellow or Green (or both) Sauce.
Arrange everything as you like on a platter and enjoy!
