Honey Habanero Chicken Wings
Sweet and spicy, addictively delicious, these wings are a crowd favorite.
Honey Habanero Wings
SERVES 4
Ingredients
3 lbs chicken wings
brine- 1.5 quarts water, 1/2C salt, 1/3C sugar, ice
6 oz Honey Habanero Sauce
3 Tbsp butter
Oil for frying
Serve with Cotija Green Sauce side
Instructions
Heat 2 cups water with salt and sugar to dissolve, place in 2 quart container, add remaining cold water and 1 cup ice
Add chicken wings to container or divide into two large ziploc bags and top with brine, refrigerate for 2-4 hours.
Remove wings from brine and place on sheet tray; bake in 350 degree oven for 30-40 minutes, flipping half way through. Great place to chill over night if needed.
Fry time- Heat oil to 375 and fry in manageable batches and place on sheet tray with rack in 225 degree oven.
Sauce time- Heat Honey Habanero Sauce in shallow pan, whisk in butter.
Place warm wings in bowl and toss with sauce. Enjoy with creamy Cotija Green sauce on the side
Cotija Green Sauce Side-
1/2C mayo, 1/2C sour cream, 1/3C Llamacita Green Sauce, 1/2C crumbled Cotija cheese (plus more for garnish), squeeze of lime.
Mix all ingredients and serve
